Salt, to taste

Black pepper, to taste

Fresh parsley, chopped (optional)

Green onion, chopped (optional)

Instructions:

Preheat oven to 375°F (190°C).

Prepare bread: Gently flatten each bread slice with a rolling pin.

Press into a greased muffin tin to form a cup shape.

Layer cheese: Place one slice of cheese into each bread cup.

Add bacon: Lightly cook bacon until just starting to crisp, then curl a slice into each cup on top of the cheese.

Add eggs: Crack eggs into a bowl, whisk lightly, and pour evenly into the cups.

Season with salt and black pepper.

Bake for 12–15 minutes, or until eggs are set to your liking.

Garnish with fresh parsley and green onion before serving.

How to Store:

Refrigerator:
Let the breakfast cups cool completely, then place them in an airtight container. Store in the fridge for up to 4 days.

Freezer:
Wrap each cooled cup individually in plastic wrap or foil, then place them in a freezer-safe bag or container. Freeze for up to 1 month.

To Reheat:

From the fridge: Microwave for 30–45 seconds or reheat in the oven at 350°F (175°C) for about 5–7 minutes.

From frozen: Microwave for 1–1½ minutes, or reheat in the oven at 350°F for 10–12 minutes.

Variations:

Veggie Lover: Add sautéed spinach, mushrooms, or bell peppers for a meatless option.

Ham & Swiss: Swap bacon for chopped ham and use Swiss cheese for a deli-inspired twist.

Spicy Kick: Add a dash of hot sauce or a sprinkle of chopped jalapeños.

Everything Bagel Style: Sprinkle the tops with everything bagel seasoning before baking.

Mini Omelet Cups: Scramble the eggs fully with a splash of milk, then pour into the bread cups for a more omelet-style texture.

Tips:

Prevent Sogginess: Lightly toast the bread before pressing it into the muffin tin for a crisper base.

Easy Release: Grease the muffin tin well or use silicone liners to prevent sticking.

Customize Per Cup: Let each family member choose their fillings before baking for a fun, personalized breakfast.

Batch It: Make a double batch and freeze extras for grab-and-go mornings.
