2 tablespoons flour
2 tablespoons dried parsley
1/2 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon hot sauce
1 cup shredded cheddar cheese more to garnish
PREPARATION:
In a 4-quart saucepan on medium-high heat add potatoes, cover with water (about 3-4 cups) and allow to fully cook.
Add milk, chicken cubes, onions, parsley, garlic basil, salt, pepper, hour sauce and 1 piece of bacon.
Mix well. Quickly add flour mixing until no lumps appear and mixture thickens.
Reduce heat to low cover and allow to cook for 10 minutes occasionally stirring. Add cheese, mix until melted.
Dice remaining bacon for soup garnish.
Add soup to serving bowls and garnish tops with cheese.
For a delicious twist on this easy potato soup, try adding extra vegetables like diced carrots, celery, or corn to bring more texture, color, and nutrients.
Switching up the cheese can also be fun—try Gouda, Swiss, or Monterey Jack for a unique flavor profile.
To make the soup even creamier, substitute some of the milk with heavy cream or half-and-half, adding a luscious richness.
If you want a heartier meal, consider stirring in diced ham, crumbled sausage, or cooked chicken for extra protein.
Fresh herbs like thyme, rosemary, or chives also work beautifully in this soup, adding an aromatic touch that elevates each bite.
These small adjustments make this comforting potato soup recipe even more versatile and flavorful!
To store your potato soup, let it cool to room temperature, then transfer it to an airtight container.
Refrigerate for up to 3–4 days. If you’d like to freeze it, note that soups with dairy (like milk or cheese) can sometimes separate.
To freeze, transfer the soup to a freezer-safe container, leaving about an inch of space for expansion, and store for up to 2 months.
When reheating, thaw frozen soup overnight in the refrigerator, then warm it on the stovetop over low heat, stirring occasionally to recombine the ingredients.
For a creamier texture, you can add a splash of fresh milk or cream while reheating.
