14 oz Can Diced Tomatoes

2 tsp Balsamic Vinegar
2 tsp Basil
1 tsp Oregano.

1 Bay leaf
Salt and pepper to taste.

How To Make One Pot Lasagna Soup :

Add the ground beef , onion and sausage to a large pot over medium high heat, and cook until completely browned. Drain any excess fat.

Return the pot to the stove, mix in the garlic. Saute for 30 seconds.

Pour in the pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, basil, oregano, bay leaf and salt and pepper to taste.

Cover and bring to a boil.
Break the lasagna noodles into pieces, and place in the pot.

Reduce the heat to medium low and cook until the noodles have softened.

Top with parmesan cheese, mozzarella or ricotta and serve.

There are several ways to customize this Lasagna Soup to suit your taste.

For a creamy variation, stir in a spoonful of ricotta or a splash of heavy cream before serving, adding a rich, velvety texture.

If you love extra veggies, try adding chopped bell peppers, spinach, or mushrooms along with the onions and garlic—they’ll add depth and nutrition to the soup.

You can also substitute the ground beef or sausage with ground turkey or a plant-based meat alternative for a lighter or vegetarian version (just use vegetable broth in place of chicken broth).

If you enjoy a spicier soup, a pinch of red pepper flakes will give it a nice kick.

To keep the noodles from getting too soft, cook them separately if you’re planning to store leftovers, and add them to each bowl as you serve.

For a perfect finish, top each bowl with fresh basil, a sprinkle of Parmesan, or some shredded mozzarella for an extra cheesy touch.

These simple variations allow you to tailor this Lasagna Soup to your liking, making it a comforting dish you can enjoy any night of the week.

To store Lasagna Soup, allow it to cool completely before transferring it to an airtight container. It can be kept in the refrigerator for up to 3-4 days.

If you plan to enjoy the soup later, consider storing the noodles separately to prevent them from becoming mushy.

For long-term storage, Lasagna Soup freezes well; pour it into freezer-safe containers, leaving some space at the top to allow for expansion as it freezes.

It can be stored in the freezer for up to 2-3 months.

When you’re ready to enjoy it, thaw the soup in the refrigerator overnight, then reheat on the stovetop over medium heat or in the microwave until heated through.

If you have stored the noodles separately, you can cook them fresh and add them to the soup before serving for the best texture.
