Cream Cheese Banana Bread – light, moist and delicious!

Ingredients:

1 1/2 cups all-purpose flour.

1 teaspoon baking soda.

1/2 teaspoon salt.

1/4 teaspoon ground cinnamon.

1/2 cup unsalted butter, softened.

1 cup granulated sugar.

2 large eggs.

1 teaspoon vanilla extract.

3 ripe bananas, mashed.

1/4 cup sour cream.

4 ounces cream cheese, softened.

Directions:
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.

In a large bowl, cream together butter and sugar until light and fluffy.

Beat in eggs, one at a time, then stir in vanilla extract.

Mix in mashed bananas and sour cream until well combined.

In a separate bowl, beat cream cheese until smooth.

Pour half of the banana batter into the prepared loaf pan. Spread the cream cheese over the batter. Top with remaining banana batter.

Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

To store Cream Cheese Banana Bread, first allow it to cool completely at room temperature to prevent condensation from making it soggy.

Once cooled, wrap the bread tightly in plastic wrap or aluminum foil, or place it in an airtight container to keep it fresh.

For short-term storage, you can keep it in the refrigerator for up to a week.

If you need to store it for a longer period, freezing is the best option; wrap the bread securely and place it in a freezer-safe bag or container, where it can last for up to three months.

When ready to enjoy, thaw the bread at room temperature for several hours or warm it gently in the oven to bring back its fresh-baked texture.

Proper storage ensures that the bread remains moist and flavorful.
